I don’t usually get all caught up in the Christmas spirit, but things are looking merry and bright these days.
I feel like I’m in such a good headspace, very optimistic about the remainder of 2018 and looking forward to the new year.
I have been battling a horrible cold for the past two days, sore throat, achy body, stuffy nose and all of the yucky stuff you could imagine. I’m just hoping it all turns around so that I can cook.
I have turkey and ham fatigue from Thanksgiving, so today, I will be making a simple Christmas meal – Cornish hens, mashed potatoes, stuffing, mango and feta cheese salad and corn on the cob.
I’m proud of my restraint this year. I usually buy a Christmas tree, but this time, I got a small artificial tree for my table. I love it.
I also didn’t go crazy spending. I made a decision to buy four gifts this Christmas and that is what I did. It feels good to hold on to my money. That is the best gift ever.
Beyond cooking, I am going to enjoy a quiet day at home, reflect on all of my blessings and just relax – something I rarely get a chance to do.
